PREPARATION OF SOYBEAN CURD AND RAW MATERIAL OF SOYBEAN CURD

摘要

PURPOSE:To obtain soybean curd having abundant fibrin and high nutritive value with a small generating amount of bean-curd refuse in high yield by using a raw material of soybean curd derived from pulverization of soybean with skin in a dried state using a centrifugal flowing crusher. CONSTITUTION:Soybean with skin is pulverized by annular spiral motion of balls 20 induced with rotation of a rotor 14 and gas blown from a gap 18 using a centrifugal flowing crusher 12 composed of a annular doughnut-like hollow part formed by a rotor 14 and a stator 16, a gap 18 blowing gas into the hollow part and many balls 20 received in the hollow part to obtain pulverized soybean. Water is added to said soybean powder and boiled, then soybean curd is obtained by an usual method.
