In order to produce deposit-free cloudy juices from vegetable products, the raw juice is clarified in an ultrafiltration unit (2) and mixed as a cold, sterile, clear juice with the filtration residue from a cross-current filtration. Before being introduced into the mixer (4), the filtration residue used as the clouding agent is extremely finely comminuted in a comminuter (6). Also added to the mixer (4) together with the filtration residue are stabilizers to prevent the finely comminuted solid particles from coagulating. The overall result of all the measures called for by the invention is a mainly deposit-free cloudy juice. |
