PURPOSE:To safely and easily improve the acidic taste of organic acids and obtain an acidulant for food and drink having good acidic taste by adding a specific amount of itaconic acid to an organic acid. CONSTITUTION:Itaconic acid is added in an amount of 1-24% to an organic acid such as citric acid, tartaric acid and malic acid. The addition of itaconic acid develops an acid taste completely different from the original tastes of the acidulants, going beyond the additive or synergistic effect. An acidulant for food and drink having unique excellent acidic taste can be prepared by this process.
