The invention relates to a method for dehydrating organic material consisting in locating the organic material inside a closed enclosure and in carrying out a first processing cycle consisting in causing the circulation, in the enclosure, in a circuit, of air the temperature of which is below 40 DEG C when it passes over the organic material, in diverting part of the air circulating in the enclosure in order to extract part of the water vapour which it contains and then in reinjecting the air thus dried so that it mixes with the air circulating in the enclosure. The invention also relates to an apparatus for implementing the method, comprising a leaktight enclosure (1), a means (4) for causing the circulation of the air contained in the leaktight enclosure so as to make it pass over the organic material; and a means (4, 6, 7) for diverting part of this circulating air, drying it and reintroducing it into the air circulating in the enclosure. <IMAGE>
