In a process for producing a concentrated, stable solution of a lactose derivative from an aqueous solution containing lactose monohydrate, a chemical compound such as an alcohol capable of reacting with one of the two OH functions of the lactose monohydrate is added to this solution. The process is useful, in particular, for preventing the crystallization of lactose, even in concentrated solution.
