PURPOSE:To produce the title enzyme useful as an improver for bread production safely, inexpensively and in good productivity by using a bacterium belonging to the genus Bacillus amplified with gamma-glutamyltranspeptidase gene by gene recombination. CONSTITUTION:First, a bacterium [e.g. Bacillus subtilis SJ139 (FERM P-2,695)] belonging to the genus Bacillus, having recombinant DNA of DNA fragment containing gene to code gamma-glutamyltranspeptidase gene derived from a bacterium belonging to the genus Bacillus and vector DNA is cultured in a medium. Then the objective enzyme formed and accumulated in the culture mixture is collected. |
