PURPOSE:To milden the taste of a beverage and improve the smell thereof by a simple method comprising forcibly bubbling the beverage with an oxygen- containing gas. CONSTITUTION:A beverage supplied broadly for drinking and including juices, drinking water and beverages prepared by extracting ingredients from Japanese green tea, coffee, black tea, oolong tea, barley water, etc., with warm water or boiled water is treated in the following manner. The beverage is bubbled with >=1%, preferably 20-100%, of an oxygen-containing gas having an oxygen partial pressure of 0.2-1.0 atmosphere. The gas may be air, pure oxygen or a mixture of oxygen with any other gas such as He or N2. The method gives a beverage having a mild taste and an improved smell. |
