The invention rleates to gamma -cyclodextrin glycosyl transferases obtainable by screening bacteria for the secretion of a gamma -cyclodextrin glycosyl transferase, the bacteria are characterized and the gamma -cyclodextrin glycosyl transferase of the bacteria is purified and characterized biochemically. These enzymes can be used for the production of gamma cyclodextrin from starch.
