PURPOSE:To stably obtain diacetyl and acetoin at high concentration by adding iron porphyrin, etc., and a metal salt to a culture substrate containing a sugar source assimilable to lactobacillus, inoculating lactobacillus to the medium and culturing under aerobic condition. CONSTITUTION:A culture substrate containing a sugar source assimilable to lactobacillus (e.g. lactose) is incorporated with (A) 0.1-500muM (in terms of iron porphyrin) of one or more components selected from iron porphyrin, heme protein and animal tissue or blood containing iron porphyrin and (B) 0.01-10mM of a metal salt (e.g. CuCl2). A lactobacillus (e.g. Lactobacillus casei ATCC 334) is inoculated to the substrate and aerobically cultured under shaking or aeration. |
