摘要 PURPOSE:To readily and surely obtain ground meat usable for practical use from a raw material of meat improper as a raw material of marine processed food by blending fish meat with transglutaminase derived from microorganism and serum, plasma or glair. CONSTITUTION:Fish meat is blended with 0.1-700 unit/g transglutaminase derived from microorganism based on fish protein and serum, plasma or glair to give ground fish meat. Especially picked meat, ground meat or dehydrated meat subjected to water immersion is preferably as the fish meat to be used because excellent effects can be obtained in the meat. Transglutaminase separated from liver of guinea pig or derived from microorganism may be cited as the transglutaminase. When the amount of the transglutaminase added to raw material fish meat is small, an amount of the transglutaminase bonded to raw material fish is small and effects are low, while, the amount is too excessive, the effects are shown extremely rapidly, processing operations such as stirring, forming, etc., are made difficult and qualities of prepared products are lowered.
