摘要

PURPOSE:To mold to an extrudate having a texture extremely resembled to animal meat with utilizing offal of animal meat as a tissued material containing abundant fibrous structure by treating animal meat having a specific carneous fiber length not subjected to heat denaturation with a twin-screwed extruder. CONSTITUTION:Water is added to animal meat not subjected to heat denaturation, preferably freeze-dried, containing >=30wt.% carneous fiber having 5-50mm length and treated with a twin-screwed extruder to afford the aimed substituting material of animal meat.
