Said compound has following physicochemical properties; molecular formula: C9H17O7N; molecular weight: 251 (by mass spectrometry); color reaction: positive to ninhydrin, o- phthalaldehyde, phenolsulfuric acid and Somogyi-Nelson's method; color of material: white. USE:Used as a low-caloric sweetener for various foods, food additives or drinks. PREPARATION:A strain (e.g. Rhodotorula lactosa IFO 1423 strain, Rhodotorula lactosa IFO 1424 strain or Neurospora sitophila IFO 6070 strain, etc.) belonging to genus Rhodotorula or genus Neurospora is preferably subjected to a liquid shaking cultivation. |
