PURPOSE:To obtain the subject complex material useful for foods or drugs, etc., as functional protein having a high emulsifying activity and an antibacterial activity with safety by boning protein and branched polysaccharide with an aminocarbonyl reaction. CONSTITUTION:Protein is bonded to branched polysaccharide with an aminocarbonyl reaction to afford the objective complex material. Besides, e.g. dextran is used as the polysaccharide and allowed to react preferably in a condition of 50-80 deg.C and 60-80% relative humidity for 2-6 week. |
