Marine invertebrates such as mussels or sea-urchins intended for consumption in restaurants etc. are kept in healthy condition, e.g. for a week or so in a conainer whose roof has a rotary sprinkler supplied air water whose correct salinity is maintained from a salt water reservoir with filter. An agoniser is connected by a pump to supply O3 for countering bacteria and other contaminating parasites etc., at least for a limited period.
