PURPOSE:To inexpensively obtain a food raw material having low molecular weight, good digestibility and high nutritive value by pulverizing chorion or carapace of Crustacea and adding an aqueous solution of citric acid or protease thereto to treat the resultant powder. CONSTITUTION:Chorion or carapace of Crustacea is pulverized to afford a powder material. The powder material is dipped into an aqueous solution of citric acid. A protein in the powder material is decomposed by proteolytic enzyme and citric acid contained in the powder material and then reacted with an inorganic material (ash) to afford the food raw material which is a mixture containing an amino acid and citric acid salt. The above-mentioned powder is dipped in an aqueous solution of citric acid to which protease is added to provide the food raw material which is a mixture of citric acid salt mainly containing calcium and magnesium and amino acid. |
