PURPOSE:To facilitate the intrusion of air into a product and to obtain a product having excellent palatability and impregnation easiness of seasoning by dissolving air into pressurized water and supplying the air-containing water in the kneading process of KONJAK paste (paste made from the starch of devil's tongue). CONSTITUTION:KONJAK paste is supplied from a hopper 12 to a kneading cylinder 10 with a pump 17 and transferred under kneading with stirring blades 11. Pressurized water 7 having a prescribed pressure and prepared by a pressurized water supplying apparatus 16 is transferred through a pipe 18 and introduced into the KONJAK paste in the kneading cylinder 10 through a pressurized water feeding port 9. The pressure of the pressurized water abruptly drops to the pressure in the kneading cylinder and air unable to be dissolved in water is released into and uniformly dispersed in the KONJAK paste. Subsequently, a proper amount of a coagulant is supplied to the paste from a coagulant feeding port 13 and the kneading of the paste is continued in a state keeping the coagulant and bubbles in the paste. The obtained paste is delivered from a delivery port 14 and subjected to conventional forming and heating treatment to obtain the objective product. The pressurized water supplying apparatus 16 is preferably composed of a pressure tank 1, etc., provided with a water-feeding port 4, a compressed air feeding port 2 and a pressurized water discharging port 3. |
