PURPOSE:To provide processed egg powder having a texture like the yolk of hard boiled egg by preparing the aggregate of spherical yolk-containing water-insoluble dry egg particles. CONSTITUTION:The processed egg powder (water content: usually 3-5%; average particle diameter: usually 5-200mum, preferably 20-150mum) comprises the aggregate of thermally denatured water-insoluble dry yolk powder, dry all egg powder (yolk: >=50%). The homogeneous mixture of the processed egg powder with approximately the same weight amount-three times weight amount of water gives a texture not at all soggy. The processed egg powder is prepared by spray-drying a yolk-containing egg liquid in an air stream of 130-200 deg.C and subsequently exposing the dried product to a heated steam of 80-120 deg.C for 2sec-5 min to thermally denature the product. |
