PURPOSE:To obtain a composition for marine paste products reusable as a raw material for ground fish meat even after thawing with suppressed deterioration of jelly strength of the product due to freezing of the ground fish meat after normal grinding by blending the ground fish meat with specific powdery fats and oils. CONSTITUTION:A composition obtained by coating edible fats and oils with casein and/or a salt thereof, e.g. sodium caseinate, providing powdery fats and oils containing 50-80wt.% contents of fats and oils, 3-8wt.% casein and/or salts thereof and 5-25wt.% lactose and blending ground fish meat with the resultant powdery fats and oils in an amount of >=5wt.% expressed in terms of contents of the fats and oils based on the ground fish meat. |
