PURPOSE:To produce highly active endo type inulinase at low cost by culturing an inulinase-producing fungus using a specific culture solution which comprises an inulin-containing plant material as a carbon source but not potassium phosphate. CONSTITUTION:An inulinase-producing strain belonging to the genus Penicillium is subjected to an aerated culture by using a culture solution comprising an inulin-containing plant material such as slurry prepared by thinly cutting and grinding tuber of Jerusalem artichoke or powder prepared by pulverizing a dried material thereof as a carbon source, a nitrogen source such as peptone and ammonium phosphate as an inorganic nitrogen source but not potassium phosphate. Then the culture solution is filtered or centrifuged and the fungi are removed to give an enzyme solution. Since the enzyme solution consists essentially of endo type inulinase, the solution can be directly used as it is when inulooligosachccaride is produced. Consequently, highly active endo type inulinase having a small amount of exo type inulinase can be inexpensively produced. This procedure is industrially usable. |
