PURPOSE:To produce 'MISO' (fermented soy bean paste) excellent in releasability by homogeneously dispersing agar in an amount of 0.02-1.50wt.% based on the total weight therein. CONSTITUTION:Agar is dissolved in water, mixing the resultant agar solution with 'MISO' at a higher temperature (about >=50 deg.C temperature) than the gelling temperature of the agar, on the other hand, adding agar powder to 'MISO' at a higher temperature than the gelling temperature of the agar, mixing both until the agar powder is homogeneously dispersed in the 'MISO' and cooling the prepared 'MISO'. Furthermore, a seasoning, preservative, etc., e.g. sodium glutamate, dried bonito extract, sea tangle extract or an alcohol may be added to the aforementioned 'MISO'. |
