PURPOSE:To obtain a mass-producible bean-curd refuse dish preservable for a long period by mixing bean-curd refuse with a mashed pumpkin, Hijikia fusiformis and a seasoning, subjecting the resultant material to mixing treatment, hermetically sealing the prepared mixture in a heat-resistant container, housing the container in a heating pressure vessel and subjecting the mixture to heating sterilization treatment. CONSTITUTION:Bean-curd refuse, a pumpkin liquefied in a mixer and raw Hijikia fusiformis washed with water are weighed so as to provide about (4:4:2) weight ratio and a prescribed seasoning is added and mixed therewith. The materials after mixing in each adequate amount are then contained in a heat- resistant baglike container and vacuum packaged utilizing a well-known vacuum packaging machine. The resultant package is subsequently housed in a conventional well-known heating pressure vessel and subjected to heating sterilization treatment at a prescribed temperature under a prescribed atmospheric pressure. After the lapse of a prescribed time, the package is taken out of the heating pressure vessel and naturally cooled. |
