摘要 In order to improve the texture of meats to be cooked, particularly those intended for prepared cooked dishes, a marinade, containing denatured milk serum (whey) proteins and, if need be, non-gelled starch, is incorporated into the raw meat. The denatured serum proteins represent 0.5 to 2.5% by weight of the raw meat.
