摘要 Method for the extraction of constituents of a vegetable material with selective solvents. This method of extraction allows the extraction of (i) the proteins, (ii) the alcohol-soluble compounds as well as (iii) the lipids of a vegetable material such as the seeds of bitter lupin or broad beans. To this end this method consists in the following stages: A) grinding of the vegetable material to form a powder; B) first solid-liquid extraction to extract the lipids, consisting in placing the powder in contact with a solvent chosen from the group consisting of aliphatic alkanes, aromatic alkanes and their halogenated derivatives; C) second solid-liquid extraction to extract the alcohol-soluble compounds, consisting in placing the solid product obtained in B) in contact with an alcoholic solution whose alcohol content is greater than 30 DEG and D) third solid-liquid extraction to extract the proteins consisting in placing the solid product obtained in C) in contact with an aqueous solution with a pH greater than 6.
