The invention concerns a salt solution for preserving gherkins so that fermentation is not needed. The salt solution according to the present invention is an aqueous solution which contains per litre of solution: at least 0.15 kg of sodium chloride, 0.01-0.05 kg of acetic acid or lactic acid or a nontoxic salt thereof, at least 1 g each of sodium benzoate, calcium chloride and calcium sorbate, and at least 50 g each of ascorbic acid and citric acid. The taste and crispness of a product which has been processed from gherkins stored in this solution for a long time correspond fully to the taste and crispness of freshly packed gherkins. |
