PURPOSE:To obtain the title composition having high emulsion stability in a wide pH range, excellent foaming properties and shape retention free from change of viscosity, separation and plasticization by using bovine serum protein as protein and emulsifying a liquid phase and a water phase in the presence of an emulsifying agent. CONSTITUTION:Bovine serum protein is used as protein and a liquid phase and a water phase are preliminarily emulsified in the presence of an emulsifying agent (preferably polyglycerin fatty acid ester, organic acid monoglyceride, sucrose fatty acid ester or lecithin), homogenized and sterilized to give the objective composition. |
