PURPOSE:To efficiently obtain the vegetable retained in fresh texture and capable of carrying out long-term storage without carrying out boil sterilization by cleaning vegetable, packaging the vegetable containing water with a specific packaging material and subjecting the packaged vegetable to high pressure treatment. CONSTITUTION:A vegetable is cleaned and then as necessary peeled, cut and cleaned and then the vegetable is packaged together with water using a packaging material having oxygen barrier property and vegetable is sterilized and oxygen in vegetable is deactivated by retaining the vegetable after packaging in a liquid under pressure of >=1000kg/cm<2> for >=3min to provide the aimed vegetable. Furthermore, oxygen permeability is preferably 0-20cc/m<2>.24hr atom. |
