摘要 <p>Vegetables are placed in a high vacuum in a tightly sealed bag and lemon juice is added. Then they are pasteurized at temperatures lower than 100 °C (80° to 98 °C as the case may be), and can be kept for a year at +4 or +6 °C. This is a low-cost method providing improved product quality.</p>
