The invention relates to new non-ionic surfactants derived from sugars corresponding to the general formula I represented below: <IMAGE> in which R represents a saturated (C1 to C17) alkyl chain or an unsaturated chain or an aromatic group, R' is a hydrogen or a saturated or unsaturated alkyl chain or an aromatic group, R<1> = H and R<2> = OH or R<2> = H and R<1> = OH R<3> = H and R<4> = OH or R<4> = H and R<3> = OH or O-glucosyl or O-galactosyl, as well as the process for producing them without prior protection of the free hydroxyls, that is to say in only two steps from naturally occurring sugars.
