The knife sharpener does not abrade metal from the blade but works on the principle of removing waviness of the edge (50) of the blde whilst ensuring that the burr (52) remains entral. This is in contrast to the use of a steel, when the burr is pushed over at an angle and the original cutting action is lost. The sharpener has tow hardened 3 mm diameter pins clamped side by side between two guide plates. The knife blade is drawn backwards and forwards under light pressure in the groove formed by the two pins. Finally the knife is drawn downwards in the direction (B). This eases the pins slightly apart so that the burr passes through the gap and finishes in correct alignment. ADVANTAGE - Original cutting action is restored. Longer edge life.
