PURPOSE:To produce liquors and sweet foods, having flavor imparted thereto and improved in quality without any smell of KOJI (yeast) by roasting a raw material, then saccharifying and/or brewing the roasted raw material with an enzyme. CONSTITUTION:A raw substance such as grains, e.g. rice, wheat or barley, potatoes, e.g. sweet potato or potato or dates is saccharified and/or brewed with an enzyme to produce miscellaneous liquors, 'SHOCHU' (popular distilled spirit), alcohol-containing seasoning or sweet food. In the process, a roasting step is applied to the raw material. |
