Bakery prods. are made from a mixt. of milled and unmilled cereal materials (I), pressed oil seeds (II), fillers, spices and additives, by mixing with water, kneading, proving and baking. The amt. of (II) used is up to 50 wt.% of the amt.of (I). The oil seeds are pref. selected from sunflower seeds, sesame seeds, soya beans, linseed, poppy seeds, rapeseed and nuts. ADVANTAGE - Using (II) rather than unpressed oil seeds reduces the calorific value and increases the fibre content of the prods. (cf. DE3238791). In an example, a dough comprising 6 kg wheat flour, 3 kg rye flour, 2 kg sourdough, 0.18 kg salt, 0.2 kg yeast, 1.5 kg pressed walnuts and 5.5. litres water has an oil content of 0.3 kg/l and a fibre content of 1.2 kg. The corresp. values using comminuted unpressed walnuts were 0.75 kg/l and 0.75 kg.
