PURPOSE:To obtain the title product with chewy mouth feeling by adding pregelatinized starch as a texture regulator during fish meat grinding process. CONSTITUTION:The objective fish-paste product with good quality can be obtained by adding >=0.1wt.%, based on the fish meat, of partially pregelatinzed starch during fish meat grinding process. The effect of said starch will be developed at its content ca.0.1wt.%, its content ca.1wt.% will give both favorably chewy and digestible mouth feeling, and when its content is raised to >=5wt.%, blocky, meat-like mouth feeling will be effected. |
