PURPOSE:To obtain a liquid NATTO drink having high quality in terms of taste, nutrition and pharmacology from boiled solution of soybean which has been conventionally abandoned by utilizing the boiled solution occurring in a manufacturing process of NATTO, adding an iodine to the boiled solution, inoculating Bacillus natto to the boiled solution and fermenting. CONSTITUTION:A boiled solution occurring in a manufacturing process of NATTO is blended with natural iodine or an iodine compound as a main component, a saccharide and seasoning and sterilized with steam to prepare a stock solution. Then the stock solution or a diluted solution thereof is inoculated with Bacillus natto made by pure culture by conventional procedure, spores are sufficiently formed and further mixed with an organic acid and optionally spice and a coloring matter to give a liquid NATTO drink comprising the boiled solution of soybean as a raw material. The NATTO drink is freeze-dried and powdered to give powdered NATTO comprising the boiled solution of soybean as a raw material. |
