PURPOSE:To obtain the subject decomposition product exhibiting extremely low frothability, having excellent quality of sweetness, etc., and suitable as a sweetener, at a low cost, by treating an aqueous solution containing starch and glycyrrhizin with cyclodextrin.glucanotransferase. CONSTITUTION:The objective substance can be produced by treating an aqueous solution containing starch and glycyrrhizin with cyclodextrin.glucanotransferase usually at pH3-10 and 20-80 deg.C. The cyclodextrin.glucanotransferase is e.g. the one originated from Bacillus macerans.
