<p>A device for heating and roasting coffee beans, which is provided with a means for detecting factors which affect the conditions of roasting coffee beans and a means for controlling heat supplying means and/or exhausting means on the basis of detection signals inputted from the detecting means. A recommended control means is, for example, an electronic control unit such as a computer which provides a pressure sensor to detect values of pressure in the space for roasting as factors afecting the roasting conditions so as to record a pressure value inputted from the pressure sensor under a specific condition of roasting as a specific pressure value, and which regulates the amount of exhaust by controlling the exhaust means on the basis of the pressure value inputted from the pressure sensor so that a pressure value in the space for roasting is equal to the recorded specific pressure value as a target value.</p> |
