PURPOSE:To improve the sugar conversion efficiency by converting sucrose to trehalose in the presence of a specific microbial cell or its treated product. CONSTITUTION:Cells or treated cells of a microbial strain belonging to genus Enterobacter or Erwinia and capable of producing glucosyl transferase (e.g. Enterobacter sp. No.1) are inoculated in a medium containing 2-40% of sucrose and cultured at pH5.0-7.0 and 25-30 deg.C for 16-48hr under facultative anaerobic condition or aerobic condition and the cells are removed from the culture liquid. The supernatant of the culture liquid is subjected to heating, filtration, ion exchange treatment, etc., to obtain a sugar syrup containing >=60% of trehalose. |
