The butcher knife comprises a shaft and a blade for cutting up carcasses, the blade inner end being attached to the shaft inner end, the inner ends of the blade and shaft being pivotable to one another. The pivoting axis is at right-angles to a plane through the knife longitudinal axis and the blade edge. The blade inner end has an arc-shaped guide surface arranged outside the pivot axis for working in conjunction with a locating component axially movable in the same direction as the axis of the knife. The pressure of the locating component against the guide surface is adjustable. The locating pressure is produced by a spring arrangement, the extent of which and thereby its pressure on the locating component is regulated by means of a screw. |
