<p>A centrifugal force is applied to a liquid partially filling a closed container (1), by a motor (3) rotating a container-holder (2), so as to cause the surface form (13a) of the liquid to change as a function of time. The rate of change of the surface form (13a) depends on the viscosity of the liquid, e.g. a foodstuff which may be affected by bacteria. The change of the surface form (13a) is detected by a sensor (5b) outside the container (1), e.g. by transmitting light through the liquid and detecting the voltage output of a photoelectric sensor (5b); either the voltage is measured after a given time or the time taken to reach a given voltage is measured. <IMAGE></p>
