METHOD AND DEVICE FOR MANUFACTURING EDIBLE SPREAD

PURPOSE: To easily obtain an edible spread having a simple product compsn. by connecting a device for cooling and shearing the flow of process, a homogeneizer for homogeneizing this flow and a device for cooling and shearing the flow again in series to a device for the fat continuous spread. CONSTITUTION: A premix is mixed and prepd. at 58 to 61 deg.C in a temp. control tank 2 and the process flow subjected to low-tap. sterilization by a heater 2 is supplied to an A-unit 6 having a cooler including a scraped surface heat exchanger, where the rough fat continuous dispersion of a water-in-oil type is formed and cooled. The process flow is homogenized at 20 to 35 deg.C under a presser drop of 20 to 50 bar preferably by a two-stage in-line homogeneizer 5. The homogenized process flow is supplied to the next ACAC array 3 of the cooling and working devices, where the process flow is kept at 18 to 20 deg.C and sheared. The desired spread contg. 0.5 to 2.5% solid fact is thus obtained.
