摘要 |
<p>PURPOSE:To prepare pure SAKE (Japanese rice wine) having freshness and natural feeling by removing residues such as enzymes from raw SAKE using an ultrafiltration membrane produced by forming a zirconia thin film having a pore size falling within a prescribed range on the surface of a porous ceramic substrate. CONSTITUTION:A fermented raw SAKE is passed through an ultrafiltration membrane produced by forming a zirconia(ZrO2) thin film having a pore diameter of 130-220Angstrom on the surface of a porous ceramic substrate. The residues such as enzymes ca be removed from the raw SAKE by this process to obtain the objective pure SAKE.</p> |
