摘要 PURPOSE:To form the scorched surface and to eliminate forcibly heat conducted to the center part by thermal conduction by heating the surface of raw food by roasting under a reduced pressure state. CONSTITUTION:Food 10 to be worked is placed on a wire net 16 and installed in a reduced pressure container 1. Subsequently, by operating a vacuum pump 4, air is exhausted rom the inside of the pressure container 1. In the reduced pressure container 1, by energizing heaters 6a, 6b provided on the upper part and/or the lower part of the wire net 16, heat is applied to the food 10. On the other hand, by operating a cooling system installed in the lower part of the wire net 16, water vapor evaporated from the heated food 10 condenses on the surface of a cooler 5 and becomes waterdrops, and led out to the outside from a drain cock 15. In such a way, the scorched surface is generated on the surface of the food 10.
