The device comprises a reservoir (1) of dough, a conveyor (2) capable of bringing the dough (4) in the form of at least one heated continuous strip (3) from the reservoir (1) as far as the vicinity of a first end of a mandrel (5), means (6) for driving the strip of dough along and around at least a part (51) of the said mandrel in order to form a pasty (doughy) envelope (30) wound helically on itself and partially projecting beyond the other end of the mandrel and means (7) for sequentially cutting off the said projecting part (31) and thus forming the biscuits. It also comprises a supplementary reservoir (8) capable of containing a predetermined filling composition (10) and a supplementary conveyor (9) capable of continuously transporting the said composition from the supplementary reservoir as far as the inside of the said hot projecting part (31) of the pasty envelope during formation. <IMAGE>
