ALPHA-GLYCOSYL-L-ASCORBIC ACID, ITS PRODUCTION AND USE THEREOF

PURPOSE:To obtain alpha-glucosyl-L-ascorbic acid not showing the direct reducing properties by treating a solution containing L-ascorbic acid and alpha-glucosyl saccharide compound with glycosyltransferase. CONSTITUTION:A solution containing L-ascorbic acid and alpha-glucosyl saccharide compound is treated with glycosyltransferase to form alpha-glucosyl-L-ascorbic acid not showing the direct reducing properties. Then the enzyme is deactivated by heating the reaction solution, the solution is filtered, concentrated into a syrup state or dried to prepare the powder containing alpha-glucosyl-L-ascorbic acid. Cyclomaltodextrin glucanotransferase (EC2.4.1.19), alpha'-glucosidase (EC3.2.1.20), etc., are preferable as the glycosyltransferase.
