PURPOSE:To prepare garlic-containing noodles free from garlic smell and having high nutritive value by immersing garlic in an alcohol-containing liquid, adding the obtained garlic paste in the noodle-preparation process and heating the product. CONSTITUTION:A garlic is completely immersed in a liquor or seasoning liquid having an alcohol content of >=20% and left standing for >=2 months. The immersed garlic and the liquid are ground to obtain a smooth paste. A small amount of the paste is added in the water-addition step of the noodle preparation process. The paste may be heated by boiling or steaming before adding to the noodle raw material. The obtained mixture is formed in the form of noodles by conventional process and boiled to obtain the objective garlic- containing noodles. |
