PURPOSE:To enable continuous preparation of noodles using rice as a raw material without using a time-consuming spontaneous cooling process indispensable in conventional process by immediately and forcedly cooling a rolled noodle dough in place of spontaneous cooling of the dough and forming the cooled dough in the form of noodles. CONSTITUTION:Polished rice is washed with water, milled, added with water, kneaded under steaming, mixed with raw rice flour and kneaded to obtain noodle dough 1. The dough is rolled with a roller 3. The obtained noodle strip 4 is immediately and forcedly cooled in place of spontaneous cooling and slit with a noodle-string slitting roller 10 to form noodle strings 5. The lower half of the slitting roller 10 is constantly immersed in a cooling water or oil in a water tank 7 or the noodle strings slit with the slitting roller 10 are quenched with water sprayed from a spraying apparatus 8. |
