PURPOSE:To prepare an edible film having close resemblance to natural laver sheet and non-uniformly constructed composition by producing a film containing a water-insoluble fiber and a binder crosslinkable with a polyvalent metal ion and crosslinking the surface of the film with a polyvalent metal ion. CONSTITUTION:The objective edible film is prepared by producing a film containing water-insoluble fibers and a binder crosslinkable with polyvalent metal ion and crosslinking at least the surface part of the film with a polyvalent metal ion. The water-insoluble fiber is a fibrous substance insoluble in water, i.e., natural edible fiber insoluble in water in itself or an edible fibrous polysaccharide made to be water-insoluble by crosslinking. The polysaccharide to be crosslinked with a crosslinking agent is e.g. pectin, KONJAK (starch of Devil's tongue), sodium alginate, starch glycolic acid sodium salt and methyl cellulose. The crosslinking agent for crosslinking the polysaccharide is e. g. a polyvalent metal salt such as organic or inorganic salt of a polyvalent metal (e.g. calcium, magnesium or aluminum). |
