<p>PURPOSE:To brew refined SAKE having high utility of raw material, a small amount of lees formed and improved operation of lees treatment by roasting raw material rice then treating with a saccharifying enzyme derived from a fungus belonging to genus Rhizopus. CONSTITUTION:In brewing refined SAKE, raw material rice is roasted and/or steamed under normal pressure. Then the treated rice is processed with a saccharifying enzyme derived from a fungus belonging to genus Rhizopus, Carara or thermophilic Aspergillus.</p> |
