An antibacterial and antifungal composition for the preservation of foodstuffs to which a hydroxyacid of the simple sugar type is added in the form of its salt with an alkali or alkaline earth metal or ammonia to inhibit the corrosion which inevitably occurs in silos and metal containers in general.
