PURPOSE:To obtain boiled rice having taste just after boiling by immersing polished rice washed with water in warm water, dehydrating, steaming, cooling in vacuum, aging to give gelatinized rice and boiling the gelatinized rice by a low fire for a short time without steaming. CONSTITUTION:Polished rice washed with water is immersed in warm water, dehydrated, steamed, cooled in vacuum and aged to give gelatinized rice, which is rapidly boiled with a small amount of water by an electric cooker of low voltage to give boiled rice. The gelatinized rice is suitable as rice for hotel. |
