PURPOSE:To provide an apparatus for mixing vinegar to rice for SUSHI (vinegared rice), capable of uniformly mixing vinegar to cooked rice without collapsing the rice grain and effective in suppressing the stickiness of the cooked rice caused by heat by providing a stirring blade rotating in a direction opposite to the rotation of the vessel containing the cooked rice. CONSTITUTION:The objective vinegar-mixing apparatus is composed of a drum- shaped vessel 1 and a stirring blade shaft 3 placed in the vessel 1. The vessel 1 consists of nearly semicircularly divided lid 1b and main body 1a, rotates around a horizontal shaft and holds cooked rice. The stirring blade shaft 3 is supported by a drum shaft 2 and has a number of stirring blades 4 rotating in a direction opposite to the rotating direction of the vessel 1. The shaft 3 has hollow structure having a number of vinegar-ejection holes 5 and a steam releasing hole 9 at an end. Cooked rice is charged into the vessel 1, the vessel is rotated and, at the same time, vinegar is sprayed from the ejection holes 5 into the vessel 1. The rice is turned and mixed with the stirring blades 4 and the generated steam is released from the steam-releasing hole 9. |
